Makaha Maggie at Islands Fine Burgers


With a taste as vibrant as its color, pineapples are synonymous with sandy beaches and tropical vibes. Now through July, the tropical gem hits peak season throughout SoCal – to celebrate, Islands Restaurants is bringing back its popular Makaha Maggie margarita featuring house made grilled pineapple infused tequila, for a limited time until the end of May.

From its signature Hawaiian Burger with grilled pineapple rings and teriyaki sauce, to Yaki tacos topped with a fresh pineapple salsa, and even pineapple yogurt skewers for the kids, the fruit has been a staple on the surf-inspired menu since the restaurant first opened.

Kids can also join in on the fun with a themed coloring contest for a chance to with $50 to Islands

Makaha Maggie (pineapple margarita)

Make the Pineapple-Infused Tequila
STEP 1: Take one whole pineapple, remove the outer rind, then cut into 1-inch thick rings. 
STEP 2: Grill pineapple on high heart for approximately 5 minutes, flip and grill for another 5 minutes.
STEP 3: Allow the pineapple to cool completely.
STEP 4: Combine grilled, chilled pineapple with 1-liter tequila in an airtight container.
STEP 5: Refrigerate for three days.
STEP 6: Remove the pineapple rings and strain using a fine mesh strainer.

We Use This In Our Makaha Maggie (pineapple margarita):
STEP 1: Mix the following with ice and shake well:
  • 1.5 oz. pineapple-infused tequila
  • .5 oz. Grand Marnier
  • 3 oz. crushed pineapple
  • .5 oz. freshly squeezed lime juice
  • 1 oz. agave nectar
STEP 2: Pour into a cinnamon-sugar rimmed glass and enjoy!
