Chimichurri Salmon Back at Rubios!

A San Diego favorite, Rubios, has brought back a popular menu item for a limited time -- the chimichurri salmon! Made with wild-caught Alaskan salmon, the chimichurri salmon is made into a taco or burrito. 

What is chimichurri? It's a delicious "blend of basil, parsley, chives, garlic and olive oil, fire-roasted corn, white sauce, fresno chiles and spring mix," often used on salmon and steak. It's subtle, but so good on the flavorful salmon. 












Unable to resist, I tried out the two taco plate at my local Rubios, which includes refried beans, chips, and a drink (offers may vary in other stores). The verdict: LOVE! The salmon tastes like something from a far more expensive restaurant, and of course, the signature salsas always get my vote. The salmon is very tender, not overcooked, and the chimichurri sauce is perfect! 

The salmon is only available for a limited time, so visit your nearest Rubios to get your fix!
