Don't you just love the burrito places where you can just walk in and have a custom-made burrito assembled and cooked as you watch? The ease of ordering is hard to resist, but when the product is also tasty, the concept is a winner!
Pieology has taken the build-your-own concept into the pizza realm. Pieology pioneered the quick-made, great-tasting pizza process, which consists of a thin crust pizza topped based on the customer's preferences, and baked at a high temperature in a wood-fired oven.
The crust is very thin, so it bakes quickly, allowing for a fast delivery of the pie. Pizza anytime, easy.
Pieology has a limited menu of Mexican-influenced pizzas until July 30 -- Chicken Chile Verde and the Spicy Southwest pizza feature flavorful new ingredients like enchilada sauce, diced mild green chiles, cheddar cheese and sour cream. We tried these new pies on our last visit, and I have to say, I'm still trying to decide my favorite. Basically, it is a green enchilada or a red enchilada as a pizza. The result is different than anything I've tasted, but really, really yummy!
The red and green sauces are both house made, with the chicken chile verde topped with sour cream, and the spicy Southwest featuring a baja sauce. Both are a bit spicy, and pretty filling!
Save room for dessert (I know that's a silly line, but it bears saying in this instance), because the churro dessert pizza is worth it. The dessert is a thin pizza crust, topped with the cinnamon sugar topping made famous on churros, then drizzled with a homemade condensed milk sauce topped with mini chocolate chips. It's hard to stop eating it!
Pieology will have these specialty pizzas until the end of July, but even if the Southwest specials aren't your thing, the pizza is great! There are three locations in San Diego, serving lunch and dinner.
