It seems strange to be reviewing Rubio's, a San Diego staple since it opened its doors in 1983, but it's one of the best chains in SoCal, and as I've said before about chains, many stores just means that the owners did many things right!
I recently did a visit to one of their many establishments throughout San Diego, and was amazed at the quality and taste of their items, as well as being impressed at the selection of healthy items on their menu.
The fish for the tacos is lightly battered and fried, with a delicious briny seasoning. The tacos are not at all greasy, and topped with cabbage and Rubio's signature sauce. Even better, they are now available with grilled WILD salmon! We tried one of the regular, and one with salmon. Spectacular with a delcious chimchurri sauce.
Another of my favorites at Rubio's is the supremely yummy bean and cheese burrito. It's so simple, with refried beans and cheese, with a bit of their mild salsa, but this burrito is downright addictive. It is a must have for me when I visit a Rubio's location.
